True Dining & Fine Pizza is born: a new format that pairs pizza and dish.

The concept: why “authentic cuisine and evolving pizza”?

For Il Bikini, bringing authentic cuisine and pizza together is a natural evolution. Pizza is the most popular food in the world, yet it can become a contemporary vessel for a dish. In this format, every slice is conceived as a balanced plate, with toppings assembled according to the same principles a chef uses to compose a dish. In this way, the same ingredients speak through two interpretations—plate and pizza—maintaining coherence of flavour and clarity of taste.

The research begins with the dough. All doughs are made with sourdough starter, developed with different flours and blends and, in some selections, with certified filtered seawater. Toppings are chosen for quality and balance: the selection and proportion of each ingredient follow a gastronomic logic to ensure lightness, harmony and balance in every bite. Baking takes place in the historic wood-fired oven of Il Bikini, created by Franco Scarselli and reopened for the occasion. Each pizza is divided into three parts, and every slice is conceived as a dish, with ingredients and flavours calibrated to achieve balance within a single portion.

The experience is designed as a balanced journey:

  • three True Dining dishes (tradition revisited with care and attention)
  • three Fine Pizza slices (light dough, digestibility and creativity)

The True Dining & Fine Pizza – authentic cuisine and evolving pizza format will be available:

  • at lunch, every day from September, within the Locanda di Mare proposal;
  • on Sunday evenings, with special guests.
